
This dish has quickly become one of my summer favorites, a minimum of dirty dishes and nearly everything in it can be found in my yard. As a result I have christened it my "Yard Frittata". The only ingredient in this delicious dish that isn't local/regional is the feta. Now that I have begun to experiment with making cheese perhaps I will try feta at some point in the future. In the meantime, here are the details...
green onions-from the Farmer's Market, grown at a farm about 7 miles from me
Bright Lights chard, black leaf kale and miscellaneous greens from my garden
basil and lemon thyme from my garden, with a bit of dill from the Farmer's Market
eggs from a co-workers obliging chickens (Buff Orpingtons and Araucanas)
reindeer sausage from a regional butcher~ 90 miles from here
and the feta, unfortunately not local, nor regional, in fact from Wisconsin..yikes!
